Easy Afternoon Snack

This snack idea is almost too easy to be true, but the reality is that we don’t have a ton of time to spend in the kitchen making healthy food- luckily we don’t have to. Trader Joe’s is heaven sent, inexpensive, and has tons of heathy snacks for us to get down on.
This one includes pre-cooked lentils that can be served warm or cold based on your preferences, bruschetta, and feta cheese- which is completely optional if you prefer a fully vegan option! For a full serving mix up the whole bag of lentils & 3/4 of the bruschetta, and lightly sprinkle the feta cheese on top if you’re going there. Our photo is only showing a 1/2 serving.
We love the heck outta tortilla chips, so that’s our carb of choice for this “dip,” but your preference of cracker will work too.
This high protein snack (9g per 1/2 cup of lentils, 5 servings per container) is awesome poolside in the summer served chilled with a cerveza, and just as satisfying in the winter served warm by the fire. There is zero prep time unless you’re heating the lentils, which would take a couple minutes at most.
